Jan Hagel-Holland

It’s better that the bakers are on horseback than the doctors.
“Het is beter de bakkers te paard, als de dokers”
Meaning: It is better that the bakers are wealthy than the doctors.

2 cups all-purpose flour
1 cups sugar
Pinch of salt
1 ½ teaspoon cinnamon
1 cup unsalted butter or margarine
1 egg, slightly beaten with 1 teaspoon water
1 cup slivered blanched almond (or more to taste)
Optional: candied white sugar
Combine the flour, sugar, salt and cinnamon. Cut in the butter to make a stiff dough. Pat the dough into a greased cookie sheet or jelly-roll pan. Brush the surface of the dough with the water and egg mixture; allow any excess egg to run off the surface of the dough. Cover the dough with the almonds and candied sugar, if desired. You can put more or less sugar but usually you will not see any dough. Bake In preheated oven at 300 degrees F (150C) for 35 minutes. Cut when still warm into diamonds or squares.
