Gromperenzopp (Potato Soup) in Luxembourg







Luxembourg is a very small country I have visited a few times. They say the food is French with the portions of Germany. They eat foods of both cultures just like many of the German/French border towns.

Potato Soup

Remove green stalks and roots from 4 to 5 leeks. Wash well and cut into small pieces. Melt 1 tablespoon butter in a heavy soup pot. Add leeks and saute slowly on low heat until they are soft and transparent.

Cut 4 to 5 potatoes into small pieces and add to the leeks along with 3 cups boiling water and 2 teaspoons salt.

Cook for 30 minutes.

Strain mixture through sieve or food mill and return to the pot. Add 2 cups boiling milk, stir constantly and add 1 tablespoon butter. Then add 2 eggs yolks blended with 1/2 cups cream slowly to hot soup.

Add salt an pepper and finely chopped parsley if desired.
