Tomato-Garlic Rice
Pakistan/ India, Rice, side dishes
2 cups freshly cooked Jasmine rice
1 tablespoon Tomato paste
1 1/2 teaspoon garlic; finely crushed
1 1/2 teaspoon Salt
liittle oil for greasing pan
Preheat oven to 350 degrees F.
As soon as rice is cooked, poor 1 cup of water into the pan and stir and
smash the rice a bit. Mix in the tomato paste, garlic and salt.
Lightly grease an 8 to 9 inch square baking pan and empty the rice into it.
Grease one hand well with oil and pack the rice down, spreading it evenly
in the pan . Bake for 15 minutes.
Cut into squares or diamonds, if desired.
