This tastes good but i really perfer more spices in my food. I think with the leftovers I am going to put more spices in it and either make it more mexican or Indian flavored salsa and toast the left over pita to make chips.
Finely mince:
2 small cucumbers
1 green pepper
2-3 green onions
3 medium tomatoes
4 radishes(optional)
Toss with:
2 tablespoons olive oil
3 tablespoons lemon juice
1 teaspoon salt
Spread on plate and garnish with 1 Tablespoon mince parsley. Scoop up with pita bread.
