Porcupine Balls-American- Native American



Tonight we had Porcupine Balls, Mixed Vegetabes, Tossed Salad and Italian Bread.


This is an American Indian recipe that has been changed using more modern foods to prepare it. We used the bread to soak up the tomato soup sauce. It only took about 20 minutes to make it. The rice in the meatballs stick out resembling Porcupines. Children like it!!!

1 pound lean ground beef
1 egg, lightly beaten
1/2 cup instant rice
1/2 medium onion, grated
1 teaspoon fresh garlic, grated
1 tablespoon fresh parsley, chopped chopped
1/2 teaspoon salt
1/4 teaspoon black pepper

1 can condensed tomato soup
1 can water


1. Place the ground beef in a large bowl.
2. Mix in the egg, rice onion, garlic, parsley, salt and pepper.
3. Add 1 tablespoon of condensed tomato soup
4. Stir the ground beef and mix well.
5. Using a tablespoon or small scoop roll into meatballs.
6. Coat a large skillet with cooking spray and place over medium heat. Brown meat on all sides and set aside.
7.Combine remaining soup with 1/2 can water and stir until smooth. Spoon over the meatballs, cover with a lid and cook for 10 minutes or until meatballs are cooked. Leave mothballs to stand covered for 5 minutes.
8.Serves 4
