Meat Loaf

This is a another version of the meatloaf one of my daughters picked for this week.

Meatloaf

2 pounds ground beef
1 pound ground pork ( or turkey)
2 garlic cloves, finely -chopped
1 large onion, finely-chopped
1 teaspoon salt
1 teaspoon black pepper
1 bay leaf, crumbled
1/2 teaspoon thyme
1 teaspoon green pepper, chopped
1 1/2 cups dry bread crumbs
2 eggs
bacon(or turkey bacon)

Preheat oven to 325 degree F. Use an ungreased 9" x 5" x 3" pan. Mix all ingredients, except bacon, knead until thoroughly blended. Arrange enough slices of bacon in the bottom of the pan to hold meat loaf. Press meat mixture firmly into pan. Cross 2 to 4 additional slices of bacon over the top of the meat loaf. Bake 1 1 2/-1 3/4 hours or until cooked through, basting occasionally with meat juice.

Constant basting will make a moister loaf. Before serving let stand on a hot platter, allowing juices to settle.
