Another Pakistiani Kabab recipe
700 g boneless chicken breast
1 tablespoon ginger paste
4 tablespoons lemon juice
1 teaspoon white pepper
½ teaspoon salt
¼ cup butter
¾ cup flour
½ cup bread crumbs
1 inch piece ginger, chopped
1 teaspoon cardamom powder
3 egg yolks
1 teaspoon cumin seeds
1 teaspoon saffron
Cut chicken into 2 inch pieces. Place in large bowl. Mix salt, pepper, garlic and ginger paste with lemon juice and rub into the chicken pieces and let marinate for an at least and hour in the refrigerator.
Heat butter in saucepan or karahi. Add flour and fry over low heat until light brown. Reserve about 4-5 tablespoons of the mixture and keep it aside.
To the remaining flour mixture add breadcrumbs, ginger coriander, cardamom and chicken. While stirring cool for 5-8 minutes; Set aside and let cool.
Whisk the reserved flour mixture, cumin, saffron and egg yolk together.
Coat the chicken with the yolk mixture and skewer the chicken pieces together on skewers and grill or place the chicken in a oven at 325 degrees F (170C) turning once or twice for about 1 hour to brown both sides.
