Green Cabbage "Sabzi" (Band Gobi Ki Sabi)


Green Cabbage "Sabzi" (Band Gobi Ki Sabi)

Pakistan/ India, vegetable dishes, vegetables

2 1/2 pounds green cabbage; shredded
1 medium tomato; cut in thin slices
1 medium onion; cut into thin slices
1 tablespoon garlic; finely crushed
1 tablespoon ginger; finely grated
3/4 teaspoon turmeric; ground
1 1/4 teaspoon cayenne pepper
1 1/2 teaspoon Salt
4 tablespoon corn, or olive oil

Put all the ingredients except the oil into a large karhai, wok or large
wide pan. Add 1/2 cup water, stir and cover with lid. Turn heat to medium
high. When it starts to steam reduce to a simmer and cook gently for 10
minutes or until cabbage is completely wilted and almost cooked. Remove the
lid, add the oil and raise the heat to high. Stir and cook for 5 to 6
minutes. or until all the liquid has evaporated and you are able to stir
fry the cabbage briefly
