Sunflower Seeds

I just harvested the sunflower seeds todaafter work.

Salted Sunflower Seeds

Add sunflowers and 2 tablesoons salt to a large container of hot water soak overnight. Drain. Rinse the seeds lightly with water and spread on toweling to dry. As the seeds soak the hot water they will swell and absorb the brine. As they dry out the salt will crystallize inside the seeds.

This also works with peanut, pumpkin and squash seeds.

Toasted Nuts

This is not for preserving-just for flavor. Spread seeds on shallow pan and heat in a 300 degree F. oven and add 1 teaspoon oil, butter or margarine per cup of seeds. Sprinkle with a light coating of salt and heat in a 330 degree oven for 30 minutes. Spread the oiled nuts on paper towels to cool.
