Smoked Turkey

Usually every Thanksgiving I smoke a turkey the weekend before thanksgiving to have with Roasted Turkey and the feast. I am not a big fan of turkey but I do like it smoked. It tastes great and just seems to be not so dry. They only problem with smoked turkey is it is not too so good for Turkey Soup. Turkey soup is my favorite way to eat turkey, after smoked turkey, and I always make it after Thanksgiving. The following is a recipe for smoked turkey.

One 10 to 15 pound turkey fresh or thawed, unstuffed
2 medium onions
3 to 4 stacks celery with leaves
1 Tablespoon salt

Fill water pan completely full with liquid. Rinse turkey inside and out with cold water. Rub inside and out with slat. Cut onion s into quarters, celery in chucks and put into cavity. Put on cooking grill and smoke 8 to 12 hours or until meat thermometer reaches 180 Degrees F. Check water after 2 to 3 hours .
