"Fried " Chicken

Of course this is not Fried Chicken but it is a good recipe, if again like me, you have to watch the fat.


"Fried " Chicken

none

11/2 cups herb stuffing mix (not range-top); crushed in plastic bag
1 3 pound chicken; cut-up
3 tablespoon nonfat plain yogurt

Heat oven to 450 degrees. Place a wire rack on a foil-lined (for easy
cleanup) jelly-rool pan. Lightly spray rack with cooking spray.
Put stuffing mix in a plastic bag. Crush into coarse spray.
Put stuffing mix in a plastic bag. Crush into coarse crumbs. Spread crumbs
on sheet of waxed paper.
brush chicken with yogurt, then press in crumbs, turning to coat. Place on
sprayed rack, leaving space between pieces.
Bake 35 to 40 minutes until coating is browned and juices run clear when
thickest part of thigh is pierced.
Serves 4.
