This is a simple recipe. YOu can adjust the ingredients to ypour personal taste for sweetness, spice or orange flavor. If desired you can add mandarin oranges to the cooked sauce.
12 chicken drumsticks, skinned
1 12 oz can frozen orange juice concentrate, thawed and not reconstituted
2 TO 3 tablespoons honey
2 tablspoons quick-cooking tapioca
1 fresh mild jalapeno pepper or mild green chilie seeded and sthinly sliced
1/4 teaspoon salt
1 teaspoon dreid onion flakes or powdered onion
Place chicken in a slow-cooker. In a bowl mix the orange juice, honey, tapioca, chile and onions. Pour over the chicken. Cover and cook for 5 hours on Low or unitl done. Spoon sauce over chicken and serve.
